A NEWCASTLE West woman and her husband who have been running their own cookery school in Kerry for the past five years have just launched their first cook-book.
Bernie Doe, formerly Bernie Dore,from Killoughteen and her chef husband Mark Doe launched the book, Just Cooking last week, surrounded by friends, family and clients.
The idea for the book originated with satisfied customers who came to the cooking classes, Bernie told the Limerick Leader.
Just Cooking contains over 40 recipes, all of which are original and have been tried and tested by Mark, Bernie added. The emphasis is on making healthy family meals and the recipes are designed to be easy to follow.
“It’s about every day essential ingredients, nothing you couldn’t pick up in your local supermarket,” Bernice says. “It is very simple.”
“The recipes,” says Mark,” are for a home cook who wants to get a meal on the table for any occasion and to do so with flair and as little work and fuss as possible.”
But, he adds, it’s also about helping the home cook with the knowledge, tips and tricks of an experienced chef. The book is divided into sections for starters, main courses and desserts and there’s a very handy, question and answer section at the back of the book.
Mark himself was inspired to be a chef by his grandparents who owned a bakery and Bernie’s back-ground is in catering management.
The couple had travelled widely before returning to live in Dublin but five years ago, they fulfilled a dream by settling in Kerry. “About a year later, we started doing cookery classes part-time,” Bernie explains. This has since grown into a full-blown cookery school, the Kerry Cooking School which runs weekend courses, winter-courses, and runs courses groups of friends. The duo have also a corporate business side.
Cooking, Mark stresses, comes from the heart. But it is essentially about sharing.
A strong contingent from West Limerick travelled to Kerry for the launch of Just Cooking. The book is priced at €14 and will be available in the Newcastle West Book Store and O’Mahonys.
